So as you know, we have quite the little garden in our back yard. And boy does Hubster have a green thumb!
Here is what he picked yesterday:
So as you can see we don’t need to go to the farmers’ market or the produce aisle anytime soon! The surplus of green beans is awesome, we just freeze those in little baggies, each with enough for one meal. We’ll pull them out when we need them and turn them into the delicious sauteed green bean recipe I shared a couple days ago! It’s the spinach that is a problem. How do we eat it all! Will makes this one spinach side dish that we love! We have the Pepper-jack & Spinach Stuffed Chicken that we make, and Will puts a little in my omelets in the mornings a couple of times a week. But we still have so much to use before it goes bad.
Well this morning we tried making spinach smoothies, and they turned out great! What people say is true; you really can’t taste the spinach at all. Will, the pickiest eater I know, even liked it! He actually said he would eat it again!
This is how I made them, and this made enough for both of us to have two huge smoothies!
- 1 large, ripe banana
- 1 Cup Blackberries (frozen)
- 8 Strawberries (frozen)
- 3/4 cup OJ
- 1-2 TBSP Honey
- At least A packed Cup full of Spinach
- Put it all in the blender and blend till smooth. Add more or less OJ depending on how thick you like you smoothies.
I realize that OJ has a lot of sugar in it, and this smoothie was heavy on the berries, but we wanted to try something that seemed really safe to start off with. Maybe next time we will be a little more risky. Either way we got our fruits and veggies in this morning! And with all the different colors I put in there, I would say we got some major vitamin action too! Maybe I will finally kick this head cold!
